1/4 Cup Butter
1 1/2 Teaspoon Cinnamon, divided
2 Apple, cored and sliced thinly (Johnathan or McIntosh apples are best)
3 Eggs
1/2 Cup Frozen Apple Juice Concentrate, thawed
1/2 Cup all-propose flour
1/4 Cup Half and Half
1 1/2 Teaspoon Vanilla
1/4 Teaspoon Salt
1. Melt butter with 1/2 teaspoon Cinnamon over medium heat in a 10" oven proof skillet. Add apples and saute 4 minutes or until tender; set aside.
2. Place remaining on teaspoon cinnamon, eggs and next 6 ingredients in a food processor; process until smooth. Pour over apples.
3. Bake at 450* for 10 minutes or until set Cut into wedges; serve with Apple Cream spooned on top before serving.
Apple Cream
1/2 Cup Vanilla Yogurt
1/2 Teaspoon Vanilla
2 Tablespoons Frozen Apple Juice Concentrate, thawed
1. Whisk together all ingredients until smooth.
